Jamaican Jerk Fajitas

It's Goooood!

This recipe will make your guests ravenous
for every little morsel of chicken
& drop of juice left in the pan.

Things You'll Need:

  • 1 Large family pack chicken thighs (12-15 pus.)
  • 20 small flour tortillas
  • 3/4 cup Mr Happy's Genuine Jamaican Jerk Marinade

The Happy Meat:

Place the Chicken thighs in a zip locked baggy with Mr. Happy's Jamaican Jerk Marinade. Put it in the refrigerator for 24 hours prior to cook time. Be sure and tell everyone to fondle the meat every time they open the refrigerator door. This will ensure that the meat will be very very happy.

Remove the chicken from the marinade, making sure to save the remaining marinade in the bag. We will use that later.

Over a hot fire on your grill, brown the chicken for 5-7 minutes per side. Cooking more on the skin side down in order to render some of the fat out of the, soon to be, "Happy Meat."

Pre-cooked on the grill for 15 minutes

Preheat the oven to 350 degrees. Take the thighs off of the grill and take them in the house so that you can pull the meat off of the bones. Don't pick them completely clean. Leave some meat on the bones. They will be one of the favorite parts of this dish. Place the picked Happy Meat in a shallow oven safe dish.
It ain't easy to wait til it's done.

I like to arrange the Happy bones on top of the Happy Meat. (helps keep it moist and everyone loves to nibble the bones) Now pour the remaining juices and marinade over the entire dish. Bake in the oven uncovered at 350 degrees for one hour. Serve with the flour tortillas.

Put some sour cream on it.

Add your favorite garnishes or just eat the Happy Meat!
